    Healthy And Tasty Evening Snacks

    Recipe

    1/
    3 cup sifted powdered sugar

    1/
    2 teaspoon ground cardamom

    1/
    4 cup vegetable oil

    1
    cup sifted fine chickpea flour

    Ground
    pistachio, for decoration

    Directions

    STEP
    1: Beat the powdered sugar, cardamom, and oil together for 3 minutes.

    2: Add chickpea flour and beat for 1 minute more.

    3: Knead the dough for 10 minutes, adding more oil if necessary (1tbs at a
    time)

    STEP
    4: Allow it to rest for 2 hours (at room temp)

    5: Preheat the oven to 300 degrees Fahrenheit.

    6: Roll out the dough to 12-inch thickness on a floured surface.

    7: Transfer to a baking sheet lined with parchment paper, sprinkle with
    pistachios, and bake for about 15 minutes, keeping an eye on them after 10
    minutes (always bake 1 cookie first and time it to see how it goes, you don’t
    want to burn the whole batch! :D)

    8: Because they are fragile when hot, leave them on the baking sheet for at
    least 15 minutes.

    9: Decorate with additional ground pistachios and rose petals if desired!

    You’ll need:

    2
    egg whites

    1.5
    cups powdered sugar

    0.25
    teaspoon salt

    2
    tablespoons rose water

    4
    cups almond flour

    1
    teaspoon cardamom

    Optional
    for garnish: chopped almonds, dried rose petals

    To Make:

    Preheat
    the oven to 350°F. Three baking sheets should be lined with parchment paper.

    Using
    an electric mixer fitted with the whisk attachment, whisk together the egg
    whites, sugar, salt, and rose water until frothy.

    In
    a small mixing bowl, combine almond flour and cardamom.

    Incorporate
    the almond/cardamom mixture into the wet mixture.

    Scoop
    dough with a small ice cream scoop (or your hands) and place on a baking sheet,
    leaving 2-3 inches between cookies. For garnish, smear some chopped almonds and
    rose petals on top of each cookie.

    Bake
    for 15-20 minutes, or until the tops are lightly golden. In an airtight
    container, it will keep for several days.
